Every coilover I've dealt with had the piece on the rod end of the shock thread on, whether it was a adapter plate or a bearing. So I would assume that the piece that gets clamped in the dog bone threads off.
Concerning the external bump stop, it should be progressive and is most likely meant to be used, I've seen that style used a lot in the road racing crowds pretty regularly
